Pumpkin Pie Sugar Cookies

Pumpkin season is here! Oh, how I love this season! I love pumpkin and if I could have it with everything, I would. My goal every fall and winter season is to try different pumpkin recipes and pumpkin foods at restaurants. I can’t wait to try the Starbucks Pumpkin Pie Latte.  I have heard it was delicious.

As I was researching pumpkin recipes and thinking about previous recipes I had tried. I started to crave sugar cookies. Yes, I know, I want a pumpkin recipe, but I am craving baking sugar cookies. I then started to think, how about mixing two classic recipes and making them into one? Genius!

I am going to mix pumpkin pie and sugar cookies. :)

After baking and eating a few of the cookies, they were the perfect mix. They are sweet like the classic sugar cookies, but soft and flavorful from the pumpkin. A real pumpkin pie to go. 😉 

 

 

Pumpkin Pie Sugar Cookies

Ingredients:

5 tablespoons unsalted butter, melted
3/4 cup white sugar
1 large egg
1/2 cup pumpkin puree
1 teaspoon of white vinegar
2 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoon cinnamon
1 teaspoon of allspice
1/2 teaspoon salt
1 2/3 cups king arthur wheat flour
1/3 white sugar for coating cookies

1) Preheat your oven to 350F and melt the unsalted butter in the microwave for 45-55 seconds. Once the butter has melted, pour the butter in your mixing bowl and add the sugar. Mix on medium speed for 10 minutes. You want to wait until the mixture looks like sugar cookie dough, the mixture will become light and white.

2. Once the butter and sugar mix to white soft mixture, crack egg and mix for two minutes.

3. Gently pour in pumpkin, vanilla, vinegar, baking soda, cinnamon, allspice, and salt. Mix again for a few minutes. Once mixture is well combined, add flour and mix until mixture becomes dough like. **Dough will be soft!!**

4. While the dough is mixing, grab a medium size bowl and pour 1/3 cup of sugar for coating. Turn off mixture, and detach the mixing bowl. Place the mixing bowl by the sugar bowl. Prepare your two cookie sheets and lightly lay parchment paper on cookie sheet. Place prepared cookie sheets close to the sugar bowl and mixing bowl.

5. One at a time, scoop cookie dough (I used a medium size spoon) and form into ball (dough will be soft!) and roll in sugar. Form into a ball again and roll in sugar again. Once the cookie is sugar coated to your liking, lightly flat and lay on cookie sheet (place hand over cookie sheet and cookie will lightly come off). Place cookies a 2-3 inches apart. Repeat until all cookies have been prepared.

6. Once cookie sheets are ready to be baked, place in oven for six minutes. After six minutes, switch cookie sheets to the other cooking rack, you want to make sure cookies are cooked evenly. Place oven timer to six to seven minutes.

7. When timer goes off, remove from oven and let sit for two minutes. After two minutes, remove from cookie sheet and place on cooling rack.

8. Once on cookie sheet, let cookies rest for five minutes.

9. After five minutes, pour a cup of milk and enjoy!!!!
